So, in case you are completely detached from social media, you more than likely know that tonight is the last episode of the series of Breaking Bad on AMC (even if you don’t watch it). Well two of my best friends got me hooked on the show this summer and I plowed through the entire show up until the new episodes in just a few months. I’m excited to see how the series ends but it is bittersweet to see it all over. So how do I cope? Bake.
For the final episode of Breaking Bad I made some cupcakes to rival Heisenberg’s famous blue product. The cupcakes are a very rich dark chocolate blue velvet with a classic cream cheese frosting and some (crushed blue candy) Heisenberg topping. I must admit that the idea originally came from my two friends that got me hooked on the series so a big thank you to Rachel and Chris for the idea of these deliciously bad cupcakes.
(P.S. Say hello to my new cat, Marceline that makes a little entrance here when she barged in and had to try some of the buttermilk we had, in a separate dish of course!)
Dark Chocolate Blue Velvet Cupcakes
½ cup butter
1 ½ cups sugar
1 ounce blue gel paste food coloring
2 tablespoons special dark (or regular) cocoa
2 ¼ cups all-purpose flour
1 scant teaspoon salt
1 teaspoon vanilla
1 teaspoon baking soda
1 cup buttermilk
1 tablespoon vinegar
Preheat oven to 350 degrees F. Grease and flour or line cupcake pans.
Cream together butter, sugar and eggs. Make a paste of food coloring and cocoa and add to mixture. Add flour with buttermilk and vanilla. Alternately add soda and vinegar; just blend, don’t beat hard.
Bake 25 minutes. Cool cupcakes thoroughly before frosting.
Classic Cream Cheese Frosting
4 ounces cream cheese, softened
4 ounces unsalted butter, softened
1 1/2 – 2 cups powdered sugar
1 teaspoon vanilla
Cream together butter and cream cheese. Add vanilla. Mix in powdered sugar 1/2 cup at a time until sweetened to taste.
Frost the cupcakes and top with crushed blue rock candy!
