Pumpkin Oatmeal Cookies

I just came across this recipe and decided to go with it! I thought it may be much doing this recipe since I was planning on doing something else pumpkin flavored but, hey, tis the season for all the pumpkin flavors so why not!
They ended up coming out positively scrumptious so I say its well worth all the pumpkin flavors. Also, it calls for some all purpose flour and some whole wheat flour which I found awkward but decided to go for that anyways, too, even though I’m not entirely sure what that or the flax seed does. Also, the recipe calls for Pumpkin Pie Hershey Kisses to top the cookies but I, sadly, could not find any in the grocery store so my cookies went untopped.
As a last minute thing we decided to put some of the cookie dough on an upside down muffin tin to make little cookie cups! They came out great and we can’t wait to fill them with ice cream.

Pumpkin Oatmeal Cookies

1 1/2 cups all purpose flour
1/2 cup of whole wheat flour
1 1/2 cups of oats
1 teaspoon baking soda
2 teaspoons of ground cinnamon
1 teaspoon of pumpkin spice
1 teaspoon salt (optional)
1 cup butter, room temperature
3/4 cup of light brown sugar
1/2 cup granulated sugar
1 tablespoon flax seed meal
1 cup of pumpkin puree
1 egg
2 teaspoons vanilla
1 cup of chocolate chips (optional)
1 bag of Hershey Pumpkin Spice Kisses (optional, to top cookies)

Preheat the oven to 350 degrees and line your cookie sheets with parchment or a baking mat.  In a large mixing bowl combine the flours, oats, soda, cinnamon, pumpkin pie spice and salt in a bowl.  In your stand mixer, paddle attached, blend butter and sugars.  Once fluffy, add the flax, pumpkin, egg and vanilla.  Beat well.  Then add the flour mixture to the stand mixer and blend.  By hand add the chocolate chips, if using.  Drop with a scoop onto your cookie sheet and bake for 13-15 minutes.

If you have the Kissies to top the cookies, unwrap them while the cookies are baking and push them lightly onto the cookies when they are still warm from the oven.
