This week has a fun little story to it’s recipe. So, as a photo student being back at school, I have assignments I have to do and this week I did a still life with a bunch of junk food. However, it will never be eaten in my apartment so there was kind of a lapse in my judgement there. So last night my girlfriend offers ‘why not do a cookies ‘n cream cupcakes with all of the oreos you have?’ Genius.
So this week is a cookies and cream based cupcake with an Oreo cookie on the bottom and Oreo cookie in the batter and frosting made with the fillings! She also said that they were absolutely in the top ten of all of the cupcakes I made (hopefully because of taste and not because they were all her idea!).
Cookies n’ Cream Cupcakes
1 1/2 cups flour
1 1/2 teaspoons baking powder
1 stick unsalted butter
1 cup sugar
2 large eggs, room temperature
1/2 teaspoons vanilla extract
1/2 cup whole milk
Crushed up cookies from the Oreo
Combine dry ingredients (oreo cookies included) and set aside. Blend butter and sugar together until smooth and add remaining wet ingredients. Add dry ingredients to wet and mix well. Fill cupcake try with tins and place one Oreo at the bottom of each tin and fill with batter. Bake at 350 F for 15-18 minutes or until toothpick inserted comes out clean.
Oreo Filling Chocolate Frosting
20 Oreo cream centers
2 tbs cocoa powder
1/4 cup powder sugar
splash of whole milk (or more for consistency)
Blend all ingredients until combined!
